
This week we celebrated Barbados’ Independence Day on behalf of one of our Love Walk residents.
He told us about Conkies – traditional cakes cooked to celebrate the day. We decided to mark the occasion by making them: grating coconut, pumpkin and sweet potato and mixing with cornmeal, dark sugar and spices. All very Caribbean!
The cakes are traditionally steamed in banana leaves – so our resident bought some banana leaves; unfolded and washed them; and cut them into squares – each receiving a dollop of Conkie mix before folding them up into little parcels and then steaming them. They were great and so much fun to make!
